Marination
  1. In a bowl, mix olive oil, lemon juice, lemon zest, minced garlic, salt, and pepper. Add the chicken breasts, ensuring they are fully coated. Let them marinate for at least 15 minutes for enhanced flavor.
Cooking Chicken
  1. Heat a skillet over medium-high heat. Once hot, add the marinated chicken breasts. Cook for 6-7 minutes on each side, or until golden brown and cooked through. Use a meat thermometer to ensure they reach an internal temperature of 165°F (74°C).
Sautéing Zucchini
  1. In the same skillet, add the sliced zucchini. Sauté for about 5-7 minutes until they soften, stirring occasionally. Season with salt and pepper to taste.
Serving
  1. Place the chicken alongside the sautéed zucchini on a serving platter, garnishing with fresh herbs for a colorful presentation and added flavor.
