  • 1 pound breakfast sausage, cooked and crumbled can swap with turkey or vegan sausage
  • 4 cups cubed bread day-old bread adds the best texture
  • 1 cup chopped vegetables such as bell peppers or spinach for added nutrition (optional)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the eggs, milk, salt, and pepper.
  3. In a greased 9×13 inch baking dish, layer the cubed bread evenly across the bottom.
  4. Sprinkle the cooked sausage evenly over the bread layer, followed by your choice of vegetables if using.
  5. Pour the egg mixture over the layers, pressing down the bread gently if needed.
  6. Top with the shredded cheese.
Cooking
  1. Bake in the preheated oven for 45 minutes, or until the casserole is set and the cheese is bubbly and golden brown.
  2. Let it cool for a few minutes before slicing and serving.

Notes

This casserole can be prepared the night before and refrigerated. Leftovers can be stored in the fridge for up to 3-4 days or frozen for up to 2 months. Reheat in the microwave or a 350°F oven.
