Salad Ingredients
  • 8 ounces rotini or fusilli pasta Perfect for holding onto that creamy dressing.
  • 2 cups grilled chicken, diced Use leftovers or store-bought rotisserie chicken.
  • 2 cups romaine lettuce, chopped Can substitute with spinach or kale.
  • 1/2 cup grated Parmesan cheese Adds a salty kick.
  • 1/2 cup Caesar dressing Homemade or store-bought.
  • 1 cup croutons Homemade or store-bought for crunch.

Method
 

Preparation
  1. In a large pot, bring salted water to a boil and add the pasta. Cook according to package instructions until al dente.
  2. Once pasta is done, drain and rinse under cold water to stop cooking.
  3. If using fresh chicken, grill or sauté until cooked through, then dice into pieces. Alternatively, shred leftover or rotisserie chicken.
Mixing
  1. In a large mixing bowl, combine the cooked pasta, chicken, and chopped romaine lettuce.
  2. Pour Caesar dressing over the mixture and sprinkle grated Parmesan cheese. Toss gently until well combined.
Serving
  1. Add croutons just before serving for crunch, or chill in the fridge for an hour to enhance flavors.

Notes

This salad can be prepped in advance. Store in an airtight container in the refrigerator and best consumed within 3 days. For freshness, add croutons right before serving.
