  • 1 medium red onion Adds flavor and a pop of color.
  • 1 cup cherry tomatoes Halved for sweetness; optional but recommended!
  • 1/4 cup rice vinegar Provides tang; can swap with apple cider vinegar.
  • 1 tablespoon olive oil Adds richness to the dressing.
  • to taste salt and pepper Essential for flavor.

Preparation
  1. Start by slicing your cucumbers. Consider peeling alternating strips of the cucumber skin for visual flair.
  2. Thinly slice the red onion and combine it with the cucumbers in a large mixing bowl.
  3. Add the halved cherry tomatoes to the bowl.
  4. In a separate bowl, whisk together the rice vinegar, olive oil, salt, and pepper until well combined.
  5. Pour the dressing over the cucumber mixture and toss gently to combine.
  6. Let it sit for about 5 minutes before serving to develop the flavors, or serve immediately if pressed for time.

Notes

Serves chilled, fantastic as a side with grilled meats or as a healthy snack. Store leftovers in an airtight container in the fridge for up to two days. Freezing is not recommended.
