Ingredients
  

For the shrimp
  • 1 pound Fresh or frozen shrimp, peeled and deveined
  • 2 tablespoons Olive oil
  • 2 cloves Garlic, minced
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
For the corn salsa
  • 1 cup Corn (fresh or canned)
  • 2 medium Tomatoes, diced
  • 1/2 medium Red onion, finely chopped
  • 1/4 cup Cilantro, chopped
  • 2 tablespoons Lime juice
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
For serving
  • 2 medium Avocados, sliced Add on top of the bowl

Method
 

Preparation
  1. In a bowl, combine olive oil, minced garlic, salt, and pepper. Add the shrimp and toss to coat. Let it marinate for about 10 minutes.
  2. In another bowl, mix the corn, diced tomatoes, chopped red onion, cilantro, and lime juice. Season with additional salt and pepper to taste, then set aside.
Cooking
  1. Preheat your grill or grill pan over medium-high heat. Cook the marinated shrimp for about 2-3 minutes on each side until they turn pink and are cooked through.
Assembly
  1. Begin with a base of quinoa or rice, if desired. Top with grilled shrimp and a generous portion of the fresh corn salsa. Finally, slice half an avocado and place it on top.
Serving
  1. Enjoy your Easy Grilled Shrimp Bowl warm, garnished with extra cilantro and a wedge of lime for squeezing.

Notes

If you have leftovers, store them in an airtight container in the refrigerator for up to 2 days. The corn salsa can be enjoyed cold and fresh.
