- Start by dicing the potatoes and slicing the kielbasa and onion.
Cooking
- In a large skillet, heat the olive oil over medium heat. Add the sliced kielbasa and cook until it’s browned, about 5-7 minutes.
- Toss in the sliced onion and diced potatoes. Stir well; let them mingle and soak up that flavorful oil.
- Sprinkle garlic powder, salt, and pepper over the skillet. Give it a good stir, cover the skillet, and reduce the heat to medium-low.
- Let it cook for about 20 minutes, stirring occasionally, until the potatoes are tender and golden.
- Once everything is beautifully cooked, remove the lid, and toss in the butter. Stir until everything is coated. Add parsley to brighten the dish, and serve hot.
Notes
Feel free to get creative with this base recipe by adding veggies like bell peppers or broccoli, or experiment with herbs and spices like thyme or smoked paprika. You can also turn this into a casserole dish topped with cheese and baked for a different twist.
