Ingredients
  

For the filling
  • 4 cups fresh or canned peaches if using canned, be sure to drain them
  • 1 cup sugar adjust to taste
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice
For the batter
  • 1 cup all-purpose flour
  • 1 cup milk can be substituted with almond milk or other plant-based milk
  • 1/2 cup butter, melted
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.
  2. In a mixing bowl, combine the peaches, 1/2 cup of sugar, cinnamon, and lemon juice. Stir well, then pour into the greased baking dish.
  3. In another bowl, whisk together the flour, the remaining 1/2 cup of sugar, baking powder, and salt.
  4. Gradually add in the milk and melted butter, stirring until just combined.
  5. Pour the batter over the peaches in the baking dish. Do not mix; the batter will float on top as it bakes.
Baking
  1. Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and a toothpick comes out clean.
  2. Allow to cool for a few minutes before serving, letting the flavors meld beautifully.

Notes

For a healthier twist, substitute half of the flour with whole wheat flour or sugar with a natural sweetener. Serve with vanilla ice cream or whipped cream.
