Preparation
- Start by washing and dicing your potatoes. Leave the skin on for added flavor, if desired. Chop the onion and bell pepper, and mince the garlic.
Cooking
- Heat the olive oil in a large skillet over medium heat. Once hot, add the sliced kielbasa. Sauté until browned and crispy, about 5-7 minutes.
- Add the diced potatoes, followed by the chopped onion and bell pepper. Stir and cook for about 10 minutes, stirring occasionally, until the potatoes begin to soften.
- When the potatoes are starting to tenderize, add the minced garlic, paprika, salt, and pepper. Avoid burning the garlic.
- Cover the skillet with a lid and reduce the heat to medium-low. Cook for an additional 10-15 minutes, or until the potatoes are golden brown and fully cooked through.
- Once ready, sprinkle with fresh parsley and serve hot.
