  • 1 lb kielbasa sausage, sliced Feel free to use turkey kielbasa for a lighter option
  • 4 medium potatoes, diced Yukon Gold or red potatoes add a nice creaminess

  • 3 cloves garlic, minced The aromatic backbone of the dish
  • 2 tablespoons olive oil Or you can use butter for richness
  • 1 teaspoon paprika Smoked paprika works wonders here!

Method
 

Preparation
  1. Start by washing and dicing your potatoes. Leave the skin on for added flavor, if desired. Chop the onion and bell pepper, and mince the garlic.
Cooking
  1. Heat the olive oil in a large skillet over medium heat. Once hot, add the sliced kielbasa. Sauté until browned and crispy, about 5-7 minutes.
  2. Add the diced potatoes, followed by the chopped onion and bell pepper. Stir and cook for about 10 minutes, stirring occasionally, until the potatoes begin to soften.
  3. When the potatoes are starting to tenderize, add the minced garlic, paprika, salt, and pepper. Avoid burning the garlic.
  4. Cover the skillet with a lid and reduce the heat to medium-low. Cook for an additional 10-15 minutes, or until the potatoes are golden brown and fully cooked through.
  5. Once ready, sprinkle with fresh parsley and serve hot.

Notes

Feel free to enhance this dish with spinach or cheese. It stores well and can be reheated easily.
