Preparation
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a large mixing bowl, whisk together the canned pumpkin, vegetable oil, and sugar until smooth.
- Add the eggs, one at a time, mixing well after each addition.
Mixing
- In another bowl, combine the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Slowly add the dry ingredients to the wet mixture, stirring just until combined. Do not overmix; the batter should be slightly lumpy.
Baking
- If you’re adding nuts or chocolate chips, gently fold them into the batter now.
- Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
- Bake in the preheated oven for about 60 minutes, or until a toothpick inserted in the center comes out clean.
- Remove from the oven and let cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
Notes
This bread freezes beautifully and is perfect for making ahead. Wrap tightly in plastic wrap or aluminum foil for storage.
