Preparation
- Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish.
- If using fresh peaches, peel, pit, and slice them. Combine the peaches with 1/2 cup of sugar in a bowl and set aside to let the flavors meld.
- In another bowl, whisk together the flour, baking powder, salt, and remaining sugar.
- Pour in the milk, melted butter, and vanilla extract. Stir until just combined; the batter will be slightly lumpy.
Assembly and Baking
- Pour the batter into the greased baking dish, and then spoon the peach mixture over the top evenly.
- Place the dish in the preheated oven and bake for 40 to 45 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
- Allow it to cool for a few minutes before serving. Enjoy warm, perhaps with a scoop of vanilla ice cream or whipped cream!
Notes
Leftovers can be stored in an airtight container in the fridge for up to three days. To reheat, microwave slices for about 30 seconds or heat in an oven at 350°F (175°C) until warmed through. Use ripe peaches for the best flavor, and don’t over-mix the batter.
