Preparation
- Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan or line it with parchment paper.
- In a mixing bowl, whisk together the sugar, vegetable oil, eggs, and vanilla extract until fully combined.
- Fold in the grated zucchini, ensuring it’s evenly distributed through the wet mixture.
- In another bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
- Gradually add the dry ingredients to the wet mixture and stir until just combined. Do not overmix; a few lumps are okay.
Baking
- Transfer your batter into the prepared loaf pan. Bake in the preheated oven for about 50-60 minutes or until a toothpick inserted in the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to finish cooling. Slice and serve.
