Ingredients
  

For the Salmon
  • 4 fillets 4 fillets of fresh salmon Look for wild-caught for the best flavor.
  • 2 tablespoons 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 juice Juice of 1 lemon For zest.
For the Mango Salsa
  • 2 ripe 2 ripe mangoes, diced
  • 1 small 1 small red onion, finely chopped
  • 1 medium 1 red bell pepper, diced
  • 1 1 jalapeño, seeded and minced Adjust to your heat preference.
  • 1 handful A handful of fresh cilantro, chopped
  • 2 juices Juice of 2 limes
  • Salt to taste

Method
 

Preparation
  1. In a large bowl, combine the diced mango, red onion, red bell pepper, jalapeño, cilantro, lime juice, and salt. Mix well and set aside to let the flavors meld.
  2. Pat the salmon fillets dry with a paper towel. In a small bowl, whisk together olive oil, salt, pepper, and lemon juice. Brush this mixture over each fillet.
Cooking
  1. Heat a grill or skillet over medium-high heat. If using a skillet, add a little olive oil to prevent sticking. Cook the salmon for about 4-6 minutes on each side, or until it flakes easily with a fork.
Serving
  1. Place the cooked salmon on a serving platter and top generously with the vibrant mango salsa.
  2. For an extra touch, garnish with lime wedges and additional cilantro.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to three days. Reheat gently to maintain moisture.
