- In a large bowl, combine the diced mango, red onion, red bell pepper, jalapeño, cilantro, lime juice, and salt. Mix well and set aside to let the flavors meld.
- Pat the salmon fillets dry with a paper towel. In a small bowl, whisk together olive oil, salt, pepper, and lemon juice. Brush this mixture over each fillet.
Cooking
- Heat a grill or skillet over medium-high heat. If using a skillet, add a little olive oil to prevent sticking. Cook the salmon for about 4-6 minutes on each side, or until it flakes easily with a fork.
Serving
- Place the cooked salmon on a serving platter and top generously with the vibrant mango salsa.
- For an extra touch, garnish with lime wedges and additional cilantro.
