Preparation
- Preheat your oven to 375°F (190°C).
- In a medium bowl, whisk together the flour, baking powder, salt, oregano, and garlic powder.
- In another bowl, mix the milk, egg, and melted butter until well incorporated.
- Gently fold the wet ingredients into the dry ingredients, making sure not to over-mix.
- Stir in the shredded mozzarella and pepperoni.
- Grease your muffin tin and scoop the batter into each cup, filling them about 2/3 full.
Baking
- Bake for 20 minutes or until the tops are golden brown and a toothpick comes out clean.
- For added flavor, melt some additional butter, mix with crushed garlic, and brush it over the hot cupcakes immediately after baking.
- Let them cool for a few minutes before serving.
Notes
These cupcakes may be stored in an airtight container in the fridge for up to three days. They can be reheated in a microwave or oven.
