  • 4 tablespoons unsalted butter, divided
  • 4 cloves garlic, minced

  • 1 cup heavy cream Ensure the cream is at room temperature before adding it to the hot skillet.
  • 1 cup grated Parmesan cheese Substitute with a different cheese like Pecorino Romano for a unique twist.

Method
 

Preparation
  1. Season the bite-sized pieces of sirloin steak with salt and pepper.
  2. In a large skillet, melt 2 tablespoons of butter over medium-high heat until it starts to bubble.
Cooking
  1. Add the steak bites to the pan in a single layer. Sear for about 2-3 minutes until they develop a rich, brown crust. Flip the pieces and cook for an additional 2 minutes for medium-rare. Remove the steak from the skillet and set it aside.
  2. In the same skillet, add the remaining 2 tablespoons of butter and the minced garlic. Sauté until fragrant, about 30 seconds.
  3. Reduce the heat to medium-low and add the heavy cream. Stir frequently and let it simmer for a minute until it thickens slightly.
  4. Gradually add the grated Parmesan cheese to the cream sauce, stirring until it is fully melted and smooth.
  5. Return the steak bites to the skillet and stir until they’re well coated with sauce.
  6. Finish with a sprinkle of chopped parsley for color and added flavor.

Notes

Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, gently warm the steak bites in a skillet over medium-low heat, adding a splash of cream if needed to revive the sauce's consistency. To develop an even richer flavor, try searing the steak bites in batches to avoid overcrowding the pan.
