Ingredients
  

Pasta and Base Ingredients
  • 12 oz Pasta of your choice (spaghetti or penne)
  • 1 bunch Garlic scapes Chopped into 1-inch pieces
  • 2 tbsp Olive oil For sautéing
  • 1/4 cup Nutritional yeast To impart a cheesy flavor
  • to taste Salt
  • to taste Pepper
  • 1/4 tsp Red pepper flakes Optional for added kick
Herb Garnish
  • 1/4 cup Fresh herbs (basil or parsley) For garnish and extra flavor

Method
 

Preparation
  1. Boil salted water in a large pot. Add the pasta and cook according to the package instructions until al dente.
  2. While the pasta is cooking, chop the garlic scapes into approximately 1-inch pieces.
Cooking
  1. In a large skillet, heat the olive oil over medium heat. Add the chopped garlic scapes and sauté for 3-4 minutes until tender and fragrant.
  2. Once the pasta is cooked, reserve ½ cup of the pasta water and drain the rest. Add the cooked pasta to the skillet with the sautéed garlic scapes.
  3. Stir in the nutritional yeast and a splash of the reserved pasta water to create a creamy sauce. Mix until the pasta is well coated. Season with salt, pepper, and red pepper flakes to taste.
  4. Remove from heat, toss in fresh herbs, and give everything a gentle stir to combine.
  5. Plate the pasta while it’s warm, garnished with more herbs or a sprinkle of nutritional yeast if desired.

Notes

Leftovers can be stored in airtight containers in the refrigerator for up to 3 days. It can be frozen for up to 2 months. Reheat gently on the stove with a splash of water.
