Preparation
- Boil salted water in a large pot. Add the pasta and cook according to the package instructions until al dente.
- While the pasta is cooking, chop the garlic scapes into approximately 1-inch pieces.
Cooking
- In a large skillet, heat the olive oil over medium heat. Add the chopped garlic scapes and sauté for 3-4 minutes until tender and fragrant.
- Once the pasta is cooked, reserve ½ cup of the pasta water and drain the rest. Add the cooked pasta to the skillet with the sautéed garlic scapes.
- Stir in the nutritional yeast and a splash of the reserved pasta water to create a creamy sauce. Mix until the pasta is well coated. Season with salt, pepper, and red pepper flakes to taste.
- Remove from heat, toss in fresh herbs, and give everything a gentle stir to combine.
- Plate the pasta while it’s warm, garnished with more herbs or a sprinkle of nutritional yeast if desired.
Notes
Leftovers can be stored in airtight containers in the refrigerator for up to 3 days. It can be frozen for up to 2 months. Reheat gently on the stove with a splash of water.
