Ingredients
  

For the pesto
  • 1 cup Garlic scapes, chopped Fresh and vibrant from your garden or local farmer’s market.
  • 1/2 cup Nuts (pine nuts, walnuts, or pecans) Use your choice of nuts for flavor.
  • 1/2 cup Parmesan cheese, grated For a vegan alternative, swap with nutritional yeast.
  • 1/2 cup Olive oil Enhances flavor and texture.
  • 1 tbsp Lemon juice Adds bright acidity.
  • to taste Salt and pepper Season to taste.

Method
 

Preparation
  1. Trim the ends of the garlic scapes and roughly chop them into smaller pieces to make blending easier.
  2. In a food processor, combine the chopped garlic scapes, nuts, and Parmesan cheese. Pulse until finely chopped.
  3. While the processor is running, slowly drizzle in the olive oil until the mixture emulsifies and reaches a smooth consistency.
  4. Squeeze in the fresh lemon juice, then season with salt and pepper to taste. Blend again until fully combined.
  5. If needed, add more nuts or oil to achieve your desired thickness and flavor.

Notes

Store in an airtight container in the refrigerator for up to one week. For longer storage, freeze in ice cube trays for easy portioning. Toast your nuts for added depth and use fresh ingredients for the best flavor.
