  • 1 each lemon, juiced for that zesty brightness

Method
 

Preparation
  1. Start by chopping the garlic scapes into 1-inch pieces.
  2. If you're using raw nuts, consider toasting them lightly in a pan for extra flavor. When toasted, they should be golden and fragrant.
Blending
  1. In a food processor, combine the garlic scapes, nuts, and Parmesan cheese. Pulse until the mixture is coarsely chopped.
  2. With the food processor running, slowly drizzle in the olive oil until the pesto is smooth and creamy.
  3. Squeeze in the lemon juice and season with salt and pepper to taste. Blend again until well mixed.
Final Touch
  1. Give the pesto a taste. If it needs a little more zing, add additional lemon juice or salt as desired.
