  • 1 tablespoon vegetable oil

  1. Begin by slicing the pork tenderloin into thin strips for quick cooking and tender bites.
  2. Chop garlic scapes into 2-inch pieces.
Cooking
  1. Heat the vegetable oil in a large pan or wok over medium-high heat until it shimmers.
  2. Add the sliced pork and sauté for about 3-4 minutes until the pork is no longer pink and begins to brown.
  3. Add the minced garlic and garlic scapes, stirring well to combine, and cook for another 2-3 minutes until fragrant.
  4. Pour in the soy sauce and oyster sauce, tossing everything until the pork and garlic scapes are well coated.
  5. Season with salt and pepper, and add any optional veggies like bell peppers and carrots. Stir-fry for 2 more minutes until vegetables are vibrant but crisp.
  6. Serve hot with steamed rice or noodles.
