Cooking Instructions
  1. In a large skillet, heat the olive oil over medium-high heat.
  2. Add the chopped garlic scapes to the pan and sauté for about 2–3 minutes until they become tender and fragrant.
  3. In a separate bowl, whisk the eggs, seasoning them with a pinch of salt and pepper.
  4. Pour the beaten eggs into the skillet with the garlic scapes and stir gently to combine. Cook for an additional 2–3 minutes until the eggs are just set.
  5. If desired, drizzle soy sauce over the top and sprinkle with red pepper flakes. Serve hot.
