- In a large skillet, heat the olive oil over medium-high heat.
- Add the chopped garlic scapes to the pan and sauté for about 2–3 minutes until they become tender and fragrant.
- In a separate bowl, whisk the eggs, seasoning them with a pinch of salt and pepper.
- Pour the beaten eggs into the skillet with the garlic scapes and stir gently to combine. Cook for an additional 2–3 minutes until the eggs are just set.
- If desired, drizzle soy sauce over the top and sprinkle with red pepper flakes. Serve hot.
