  • 4 oz goat cheese Softened for easy spreading, herbed goat cheese can also be used for extra flavor.
  • 2 tbsp honey Local honey adds a beautiful richness.
  • 1 package puff pastry Store-bought keeps it quick, but feel free to make your own if you’re up for a challenge!
  • to taste salt and pepper Adjust according to preference.
  • as needed fresh herbs Think thyme or rosemary—finely chopped for garnishing.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Roll out the puff pastry on a lightly floured surface to about ¼ inch thick.
  3. Cut the pastry into squares, roughly 3x3 inches, aiming for about 12 squares.
  4. Arrange the squares on your baking sheet.
  5. Spread a teaspoon of goat cheese onto each pastry square, leaving space at the edges.
  6. Drizzle honey over the cheese.
  7. Sprinkle salt, pepper, and chopped fresh herbs for flavor.
  8. Fold the corners of the pastry over the filling to create a petite parcel or leave them open if you prefer.
Baking
  1. Bake in the preheated oven for 18-20 minutes until the pastry is golden brown and puffed.
  2. Remove from the oven and allow to cool slightly before serving.

Notes

Serve warm with extra honey on the side. These bites can be stored in an airtight container in the refrigerator for up to 2 days. Best reheated in the oven.
