Preparation
- In a bowl, combine olive oil, lemon juice, minced garlic, oregano, salt, and black pepper. Add the chicken breasts and let them marinate for at least 15 minutes.
- Prepare the quinoa or rice according to package instructions. Fluff with a fork once cooked.
Cooking
- Preheat a grill or skillet over medium-high heat. Cook the marinated chicken for about 6-7 minutes on each side until fully cooked. Let it rest for a few minutes before slicing.
- While the chicken is cooking, dice the cucumber, halve the cherry tomatoes, and slice the Kalamata olives.
Assembly
- In serving bowls, layer a base of quinoa or rice, add sliced grilled chicken on top, and then evenly distribute the cherry tomatoes, cucumber, olives, and crumbled feta cheese.
- Finish your bowls with a sprinkle of fresh parsley and an extra squeeze of lemon, if desired.
Notes
Leftovers can be stored in airtight containers for up to 3 days. To reheat, warm the chicken and quinoa in the microwave. Consider variations like adding roasted vegetables or using different grains.
