For the Meatballs

For the Tzatziki Sauce
  • 1 cup Greek yogurt Adds creaminess and tang.
  • 1 medium Cucumber, grated Mixes well with yogurt.
  • 1 clove Garlic, minced
  • 1 tbsp Lemon juice Brightens flavors.
  • 1 tbsp Dill or parsley, chopped Adds freshness.
  • 1/2 tsp Salt
For Serving
  • 2 cups Rice or quinoa Base for the bowl.
  • 1 cup Tomatoes, chopped Adds color and crunch.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the ground meat, bread crumbs, minced garlic, chopped onion, oregano, cumin, salt, and pepper. Mix until everything is well incorporated but avoid overworking the meat for tenderness.
  3. Form the mixture into golf ball-sized meatballs and place them on a baking sheet lined with parchment paper.
Cooking
  1. Bake the meatballs for 20 minutes, or until cooked through and golden brown.
  2. While the meatballs are baking, prepare the tzatziki sauce by mixing grated cucumbers with yogurt, minced garlic, lemon juice, salt, and chopped dill or parsley.
Assembly
  1. Assemble your bowls by placing a bed of rice or quinoa at the bottom, topping with meatballs, then adding fresh vegetables and a generous scoop of tzatziki.
  2. Serve immediately and enjoy.

Notes

Feel free to twist this recipe by swapping rice for cauliflower rice or adding feta cheese for a salty contrast.
