Preparation
- Start by removing the membrane from the back of the ribs.
- In a small bowl, mix together smoked paprika, garlic powder, onion powder, salt, and pepper. Generously rub this seasoning all over the ribs and chicken thighs.
- Prepare your grill for indirect heat, aiming for a temperature of around 300°F.
Cooking
- Place the ribs bone side down on the cooler part of the grill and add the chicken thighs.
- Close the lid and let them cook for about an hour.
- After an hour, brush a generous amount of barbecue sauce over the ribs, continuing to cook for another 30 minutes while basting every 10 minutes.
- Ensure the chicken thighs reach an internal temperature of 165°F and that the ribs are tender.
- Remove everything from the grill and let it rest for about 10 minutes before cutting, garnishing with fresh herbs.
Notes
Feel free to swap in different meats or add vegetables. Leftovers can be stored in an airtight container for up to three days and reheated in the oven at low temperature.
