  • 1 pound shrimp, scallops, or firm fish like salmon or swordfish Choose your preferred seafood
Vegetables
  • 2 cups bell peppers, zucchini, and cherry tomatoes Use a mix of colors for presentation
Marinade
  • 1/4 cup olive oil Extra virgin is preferred
  • 3 cloves garlic, minced Adjust garlic to taste
  • 2 tablespoons lemon juice Freshly squeezed for best flavor
  • 1 teaspoon salt Adjust to taste
  • 1/2 teaspoon black pepper Freshly ground is best
  • to taste herbs like parsley or dill Add for extra flavor
Skewers
  • 8 pieces wooden or metal skewers If wooden, soak in water for at least 30 minutes before using

Method
 

Preparation
  1. In a bowl, mix olive oil, minced garlic, lemon juice, salt, pepper, and any herbs you desire.
  2. Add your seafood of choice to the bowl, ensuring each piece is well coated. Allow it to marinate for at least 15 minutes.
  3. Alternate the seafood and vegetables on the skewers.
Grilling
  1. Preheat the grill to medium-high heat.
  2. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally until the seafood is cooked through.
  3. Serve these skewers immediately with a side of fresh salad or rice.

Notes

For a healthier twist, consider swapping out the shrimp for grilled tofu. Feel free to use mushrooms, asparagus, or cucumber slices as vegetable substitutes.
