Preparation
- Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking pan with a bit of coconut oil.
- In a large mixing bowl, combine the sliced apples, half the maple syrup, and 1 teaspoon of cinnamon. Toss until the apples are well coated.
- Transfer the apple mixture into the prepared baking pan, spreading it evenly.
- In the same bowl, mix together the rolled oats, whole wheat flour, remaining maple syrup, salt, and melted coconut oil until the mixture resembles a crumbly texture.
- Sprinkle the oat mixture evenly over the apples, ensuring you cover as much of the fruit as possible.
Baking
- Bake in the preheated oven for 25 to 30 minutes, until the apples are bubbly and the topping is golden brown.
- Remove from the oven and allow to cool slightly before serving.
Notes
This dish can be made ahead and stored in the fridge for up to three days. For freezing, wrap it tightly in plastic wrap and aluminum foil for up to three months. To reheat, bake at 350°F for about 15 minutes until heated through.
