Ingredients
  

For the Shrimp
  • 1 pound Shrimp (peeled and deveined) Use fresh or frozen shrimp.
  • 2 tablespoons Olive oil For marinating and grilling.
  • 2 cloves Garlic cloves (minced) Adds flavor to the shrimp.
  • 2 tablespoons Lime juice Freshly squeezed for best flavor.
  • 1 teaspoon Salt For seasoning.
  • 1 teaspoon Pepper For seasoning.
  • 1/4 cup Cilantro (chopped) For garnishing.
For the Bowl
  • 2 cups Cooked quinoa or brown rice Base for your bowl.
  • 2 ripe Avocados Sliced for serving.

Method
 

Preparation
  1. In a bowl, combine olive oil, minced garlic, lime juice, salt, and pepper. Add the shrimp and let them marinate for about 10 minutes.
  2. While the shrimp marinates, preheat your grill or a grill pan over medium-high heat.
  3. Thread the shrimp onto skewers, making sure they are evenly spaced.
Cooking
  1. Place the skewers on the grill and cook for about 2-3 minutes on each side, or until the shrimp are pink and opaque.
Assembly
  1. While the shrimp is grilling, prepare your bowls with a base of cooked quinoa or brown rice. Slice the avocado and set aside.
  2. Once cooked, remove the shrimp from the grill. Place the shrimp and avocado slices on top of the base. Garnish with chopped cilantro for a fresh finish.
  3. Drizzle any remaining lime juice over the bowls and serve immediately.

Notes

Variations include adding grilled vegetables, swapping grains, or using different dressings. Leftovers can be stored in an airtight container for up to 2 days.
