  • 1 cup pumpkin puree (fresh or canned)
  • 1/2 cup maple syrup or honey
  • 1/3 cup olive oil or melted coconut oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 1 1/2 cups whole wheat flour (or a gluten-free blend)
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  2. In a large mixing bowl, combine the pumpkin puree, maple syrup, olive oil, eggs, and vanilla extract, stirring until smooth.
  3. In another bowl, whisk together the whole wheat flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix!
  5. Fold in the nuts or chocolate chips, if desired.
  6. Pour the batter into the prepared loaf pan and smooth the top.
Baking
  1. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
  2. Let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

For additional flavor, toast the nuts before adding. You can also swap the pumpkin for mashed bananas or add dried cranberries for variety. Store in an airtight container for up to four days or freeze slices for up to two months.
