  • 1 medium onion, diced

  • 1 can cream of mushroom soup Or make your own if you’re feeling adventurous.

  • a handful mixed vegetables like peas or corn Optional for added nutrition.

Preparation
  1. Preheat your oven to 350°F (175°C) to ensure even cooking.
  2. In a large skillet, brown the ground beef over medium heat. Season with salt and pepper, then drain any excess fat.
  3. In a large bowl, mix the cooked beef with the diced onion, cream of mushroom soup, and a handful of cheese. If you're incorporating mixed vegetables, toss them in now for a colorful addition.
Assembly and Cooking
  1. In a greased 9x13 inch baking dish, layer half of the sliced potatoes, followed by the beef mixture, and then the remaining potatoes on top.
  2. Spread the remaining cheese over the top layer of potatoes for a bubbly, cheesy finish.
  3. Cover the dish with aluminum foil and bake for 40 minutes. This allows the potatoes to cook through.
  4. After 40 minutes, remove the foil and bake for an additional 15-20 minutes until the top is golden brown and crispy.
  5. Allow it to cool for a few minutes before serving. This dish pairs wonderfully with a fresh salad or some crusty bread.

Notes

Store any leftovers in an airtight container for up to three days. When reheating, add a splash of milk to keep the dish moist and warm it in the oven or microwave until heated through. For a twist, consider adding seasonal ingredients or mixing different varieties of cheese.
