Preparation
- Preheat your oven to 350°F (175°C), and grease a 9x13 inch baking dish.
- In a bowl, combine the sliced peaches, 1/2 cup of sugar, cinnamon, and lemon juice. Let this mixture sit for about 10 minutes.
- In a separate bowl, whisk together the flour, remaining sugar, baking powder, and salt. Gradually stir in the milk and melted butter until just combined.
Baking
- Pour the batter into the greased baking dish, then spoon the peach mixture over the top. Do not stir; let the layers remain distinct.
- Place it in the oven and bake for 30-40 minutes or until golden brown and bubbly.
- Allow the cobbler to cool for at least 15 minutes before serving.
Notes
Serve warm with a scoop of vanilla ice cream or whipped cream. Cobbler can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
