  • 6-8 fresh peaches, peeled and sliced Frozen peaches work too!
  • 1 cup granulated sugar Adjust based on the sweetness of the peaches
  • 1 teaspoon cinnamon For that cozy warmth
  • 1 tablespoon lemon juice To brighten the flavors
Batter
  • 1 cup all-purpose flour
  • 1 cup milk Can swap for almond milk
  • 1/2 cup butter, melted
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C), and grease a 9x13 inch baking dish.
  2. In a bowl, combine the sliced peaches, 1/2 cup of sugar, cinnamon, and lemon juice. Let this mixture sit for about 10 minutes.
  3. In a separate bowl, whisk together the flour, remaining sugar, baking powder, and salt. Gradually stir in the milk and melted butter until just combined.
Baking
  1. Pour the batter into the greased baking dish, then spoon the peach mixture over the top. Do not stir; let the layers remain distinct.
  2. Place it in the oven and bake for 30-40 minutes or until golden brown and bubbly.
  3. Allow the cobbler to cool for at least 15 minutes before serving.

Notes

Serve warm with a scoop of vanilla ice cream or whipped cream. Cobbler can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
