  • 10-12 scapes Garlic scapes, trimmed and chopped Substitute with garlic cloves if unavailable.
  • 1/4 cup Pine nuts, lightly toasted Can swap with walnuts or almonds.
  • 1/2 cup Parmesan cheese, grated Use nutritional yeast for a dairy-free option.
  • 1/2 cup Olive oil, extra virgin Best flavor comes from extra virgin olive oil.
  • to taste Salt and pepper Always a must for enhancing flavors.

Method
 

Preparation
  1. Trim the tough ends of the garlic scapes and chop them into smaller pieces.
Toasting Pine Nuts
  1. In a dry skillet over medium heat, toast the pine nuts until golden brown, stirring frequently.
Blending Ingredients
  1. In a food processor, combine the chopped garlic scapes, toasted pine nuts, grated Parmesan, salt, and pepper. Pulse until finely chopped.
Adding Olive Oil
  1. With the processor running, slowly drizzle in the olive oil until well combined and a smooth paste forms. Adjust salt and pepper to taste.
Storage
  1. Use immediately, or transfer to an airtight container. Cover the surface with a thin layer of olive oil to maintain color.

Notes

For a vegan option, substitute cheese with nutritional yeast and add lemon juice for acidity. Store in an airtight container for up to a week, or freeze in ice cube trays for later use.
