  • 2 pieces chicken breasts, boneless and skinless Feel free to use thighs for extra juiciness.
  • 1/4 cup honey Local honey adds a lovely flavor.
  • 2 pieces limes, juice and zest Fresh limes make all the difference.
  • 1 piece avocado, diced You can substitute with mango for a different twist.
  • 2 cups cooked brown rice Swap with quinoa for a nutritious alternative.
  • to taste salt and pepper
For Garnish
  • to taste fresh cilantro, chopped For garnish.

Preparation
  1. Marinate the chicken: In a bowl, whisk together honey, lime juice, lime zest, salt, and pepper. Add the chicken breasts and coat well. Allow to marinate for at least 15 minutes.
  2. Cook the rice: Prepare the brown rice as per package instructions. You can also add a pinch of salt and a squeeze of lime juice to enhance its flavor.
Cooking
  1. Grill the chicken: Preheat your grill or a skillet over medium-high heat. Cook the marinated chicken for about 6-7 minutes on each side, or until fully cooked and juices run clear. The sweet glaze will caramelize beautifully.
  2. Prepare the avocado: While the chicken cooks, dice the avocado and sprinkle it with a little lime juice to prevent browning.
Assembly
  1. Assemble the bowls: Once the chicken has rested for a few minutes, slice it and place it over a bed of brown rice. Top with diced avocado and a sprinkle of fresh cilantro.
  2. Serve: Drizzle any leftover marinade over the bowls or serve with lime wedges on the side for an extra zing.

Notes

You can customize this recipe by adding black beans for added fiber or corn for sweetness. If you're in the mood for a different flavor profile, try a spicy chipotle marinade. Enjoy as a standalone meal or paired with a light salad or tortilla chips. Leftovers can be stored for 3 days, but add fresh avocado right before serving.
