Ingredients
  

For the Pork Loin
  • 1 pieces 1 (3-4 pound) pork loin
  • 1 tablespoon 1 tablespoon olive oil
  • to taste Salt and pepper to taste
For the Filling
  • 8 ounces 8 ounces cream cheese, softened can substitute with a lighter cheese
  • 1 cup 1 cup shredded cheddar cheese
  • 4-6 pieces 4-6 jalapenos, finely chopped adjust based on heat preference
  • 1 tablespoon 1 tablespoon garlic powder
  • 1 tablespoon 1 tablespoon onion powder

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the cream cheese, cheddar cheese, chopped jalapenos, garlic powder, onion powder, and a pinch of salt and pepper. Mix well until all ingredients are evenly distributed.
  3. Pat the pork loin dry with paper towels. Make a lengthwise slit down the center of the loin, careful not to cut all the way through.
  4. Gently open the slit and fill it with the cheese and jalapeno mixture. Use toothpicks to secure the meat if necessary.
  5. Rub the outer surface of the pork loin with olive oil, and season generously with salt and pepper.
Cooking
  1. Place the pork on a roasting pan and bake in the preheated oven for about 1 hour to 1 hour and 30 minutes, or until the internal temperature reaches 145°F (63°C).
  2. Remove from the oven and let it rest for about 10 minutes before slicing.

Notes

Feel free to get creative with the cheese or peppers. Serve alongside roasted vegetables or creamy polenta for a complete meal. Leftovers can be stored in an airtight container for up to 3 days.
