  • 6 cups sliced fresh peaches or canned if in a pinch
  • 1 cup sugar adjust based on the ripeness of the peaches
  • 1 tablespoon lemon juice
  • 2 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 cup unsalted butter, melted

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, toss the sliced peaches with sugar, lemon juice, and vanilla extract. Let them sit for about 10 minutes.
  3. In another bowl, combine flour, baking powder, and salt. Whisk to combine, then stir in the milk and melted butter until just combined. The batter will be slightly lumpy.
  4. Pour the batter into a greased 9×13 inch baking dish. Carefully spoon the peach mixture over the top.
Baking
  1. Place the dish in the preheated oven and bake for about 35-40 minutes, or until the cobbler is golden brown.
  2. Once baked, let it cool slightly before serving.

Notes

This dessert is best topped with a scoop of vanilla ice cream. Store in an airtight container in the refrigerator for up to five days.
