  1. Slice the cucumbers into thin rounds or half-moons depending on your preference. Set aside in a bowl.
  2. Cut the cherry tomatoes in half to release their juices, which will mix beautifully with the other ingredients.
  3. Dice the fresh mozzarella into bite-sized pieces, adding a creamy element to the salad.
  4. In a large mixing bowl, combine cucumbers, tomatoes, mozzarella, and generously shaken basil leaves.
  5. Drizzle with olive oil and balsamic vinegar, and then gently toss to coat all the ingredients evenly.
  6. Sprinkle salt and pepper to taste, allowing the flavors to really shine through.
  7. Transfer to a serving dish and enjoy the freshness!

Notes

Feel free to swap spinach with kale for a stronger flavor, add olives for a briny kick, or sliced avocado for creaminess. Store any leftovers in an airtight container in the refrigerator and keep the dressing separate until ready to serve.
