Cooking Steps
- In a large skillet over medium heat, add olive oil. Once hot, add the sliced kielbasa. Cook until browned and crispy on the edges, about 4-5 minutes.
- Stir in the chopped onion, bell pepper, and garlic. Sauté until the vegetables have softened, about 3-4 minutes.
- Add the rice to the skillet, stirring well to coat it in the flavorful mixture. Let it toast for about 2 minutes.
- Carefully add the chicken broth, paprika, oregano, salt, and pepper. Bring to a gentle boil, then reduce the heat to low. Cover and let it simmer for about 20 minutes, or until the rice is tender.
- Once the rice is cooked, remove the skillet from heat. Fluff the rice gently with a fork and add a sprinkle of fresh parsley.
Notes
Leftovers can be stored in an airtight container in the fridge for up to 3 days or frozen for up to 2 months. To reheat, warm on the stove over low heat, adding a splash of chicken broth.
