Cooking Steps
  1. In a large skillet over medium heat, add olive oil. Once hot, add the sliced kielbasa. Cook until browned and crispy on the edges, about 4-5 minutes.
  2. Stir in the chopped onion, bell pepper, and garlic. Sauté until the vegetables have softened, about 3-4 minutes.
  3. Add the rice to the skillet, stirring well to coat it in the flavorful mixture. Let it toast for about 2 minutes.
  4. Carefully add the chicken broth, paprika, oregano, salt, and pepper. Bring to a gentle boil, then reduce the heat to low. Cover and let it simmer for about 20 minutes, or until the rice is tender.
  5. Once the rice is cooked, remove the skillet from heat. Fluff the rice gently with a fork and add a sprinkle of fresh parsley.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days or frozen for up to 2 months. To reheat, warm on the stove over low heat, adding a splash of chicken broth.
