Method
 

Preparation
  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the sliced kielbasa and cook for about 5-7 minutes, stirring occasionally until it’s golden brown and slightly crispy.
  3. Toss in the diced onion and sauté for another 3-4 minutes until softened.
  4. Add minced garlic and cook for an additional 1-2 minutes until fragrant.
  5. Add the gnocchi directly to the skillet and continue cooking for 3-4 minutes, allowing them to soak up flavors until they begin to float.
  6. Fold in the baby spinach and dried oregano, cooking until the spinach wilts (about 2-3 minutes).
  7. Season with salt and pepper to taste, and sprinkle in grated Parmesan cheese if desired.
  8. Remove from heat and serve hot, garnishing with extra cheese or fresh herbs if available.

Notes

This dish stores well in an airtight container for up to 3 days. Reheat in a skillet over low heat, adding olive oil to keep it moist.
