- In a large skillet, heat the olive oil over medium heat.
- Add the sliced kielbasa and cook for about 5-7 minutes, stirring occasionally until it’s golden brown and slightly crispy.
- Toss in the diced onion and sauté for another 3-4 minutes until softened.
- Add minced garlic and cook for an additional 1-2 minutes until fragrant.
- Add the gnocchi directly to the skillet and continue cooking for 3-4 minutes, allowing them to soak up flavors until they begin to float.
- Fold in the baby spinach and dried oregano, cooking until the spinach wilts (about 2-3 minutes).
- Season with salt and pepper to taste, and sprinkle in grated Parmesan cheese if desired.
- Remove from heat and serve hot, garnishing with extra cheese or fresh herbs if available.
Notes
This dish stores well in an airtight container for up to 3 days. Reheat in a skillet over low heat, adding olive oil to keep it moist.
