Preparation
- Preheat your oven to 375°F (190°C).
- Grease a 9×13-inch baking dish with cooking spray or butter.
- In a large skillet over medium heat, sauté the diced onion until it is translucent and fragrant, about 4-5 minutes.
- Add the sliced kielbasa to the skillet and cook for another 5 minutes, letting it brown slightly.
- In a separate bowl, combine the cream of mushroom soup and milk until smooth. Season generously with salt and pepper.
- Layer the sliced potatoes in the prepared baking dish, overlapping them slightly, and sprinkle a bit of salt and pepper over the top.
- Spread the kielbasa and onion mixture over the potatoes and then pour the creamy soup mixture evenly across the layers.
- Sprinkle the shredded cheese on top.
Baking
- Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.
- Remove the foil and bake for an additional 30 minutes, or until the top is golden and bubbly.
Notes
Leftovers can be stored in the refrigerator for up to 3-4 days or frozen for up to 3 months. Reheat at 350°F (175°C) for 20-30 minutes until heated through.
