  • 1 pound kielbasa sausage, smoked and sliced Feel free to swap for turkey sausage for a lighter option.
  • 4-5 medium-sized potatoes, peeled and thinly sliced Yukon Golds work beautifully.
  • 1 medium onion, diced For added warmth.
  • 2 cups shredded cheddar cheese Can use a cheese blend for a fun twist.
  • 1 can cream of mushroom soup Can substitute with cream of chicken or a homemade version.
  • 1 cup milk For the perfect consistency.
  • to taste salt and pepper

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Grease a 9×13-inch baking dish with cooking spray or butter.
  3. In a large skillet over medium heat, sauté the diced onion until it is translucent and fragrant, about 4-5 minutes.
  4. Add the sliced kielbasa to the skillet and cook for another 5 minutes, letting it brown slightly.
  5. In a separate bowl, combine the cream of mushroom soup and milk until smooth. Season generously with salt and pepper.
  6. Layer the sliced potatoes in the prepared baking dish, overlapping them slightly, and sprinkle a bit of salt and pepper over the top.
  7. Spread the kielbasa and onion mixture over the potatoes and then pour the creamy soup mixture evenly across the layers.
  8. Sprinkle the shredded cheese on top.
Baking
  1. Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.
  2. Remove the foil and bake for an additional 30 minutes, or until the top is golden and bubbly.

Notes

Leftovers can be stored in the refrigerator for up to 3-4 days or frozen for up to 3 months. Reheat at 350°F (175°C) for 20-30 minutes until heated through.
