Pasta Ingredients
  • 8 ounces Pasta (penne, fusilli, or farfalle) Use your favorite type.
  • 1 cup Cherry Tomatoes Halve for sweetness.
  • 1/2 cup Fresh Basil Chopped; fresh is best.
  • 1/4 cup Parmesan Cheese Grated or shaved; optional.
Dressing Ingredients
  • 1 lemon Lemon Juice Freshly squeezed is best.
  • 1/4 cup Olive Oil Extra virgin enhances flavor.
  • to taste Salt and Pepper Adjust to your preference.

Method
 

Preparation
  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente.
  2. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper until well combined.
  3. Once the pasta is cooked, drain and rinse under cold water to stop the cooking process.
Mixing
  1. In a large bowl, combine the cooled pasta, halved cherry tomatoes, and chopped fresh basil.
  2. Pour the lemon dressing over the pasta mixture and toss gently to coat all the ingredients evenly.
Serving
  1. Garnish with Parmesan cheese, if desired, and enjoy!

Notes

This salad can be made ahead of time, improving the flavors as they meld together. Store leftovers in the fridge for up to 3 days. Leave dressing off until ready to serve to keep salad fresh.
