  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon allspice
  • optional nuts or chocolate chips For added texture.

Preparation
  1. Preheat your oven to 350°F (175°C) and grease two 9x5 inch loaf pans.
  2. In a large mixing bowl, combine the pure pumpkin, vegetable oil, and sugar until smooth.
  3. Add the eggs one at a time, ensuring they’re fully incorporated before adding the next.
  4. In a separate bowl, sift together the flour, baking soda, salt, and spices.
  5. Gradually fold the dry ingredients into the wet mixture. Mix just until combined.
  6. If desired, gently stir in any nuts or chocolate chips.
  7. Pour the batter evenly into the prepared loaf pans.
Baking
  1. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  2. Cool in the pans for about 10 minutes before transferring to a wire rack to cool completely.

Tips: Use room temperature ingredients for better texture, sift dry ingredients to incorporate air, and keep an eye during the last minutes of baking.
