  • 1 cup cherry tomatoes, halved
  • 1/2 cup feta cheese, crumbled feel free to omit for a dairy-free version
  • 1/4 cup fresh parsley or dill, chopped
Dressing
  • 3 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon honey or agave syrup to taste
  • Salt and pepper to taste
  • Optional: a splash of lemon vinaigrette for added zing

Preparation
  1. Wash and slice the cucumbers thinly. If you prefer, you can peel them to reduce bitterness.
  2. Slice the red onion thinly and halve the cherry tomatoes.
Mixing Dressing
  1. In a small bowl, whisk together the olive oil, red wine vinegar, honey, salt, and pepper until well blended. Feel free to adjust the sweetness to your liking.
Combining Ingredients
  1. In a large bowl, combine the sliced cucumbers, red onion, cherry tomatoes, and feta cheese.
  2. Add the dressing and toss gently until all the vegetables are well-coated.
Final Touch
  1. Sprinkle the fresh parsley or dill on top. Give everything a final toss, and you’re ready to serve!

Notes

For best flavor, let the salad sit for about 10 minutes after adding the dressing; this allows the flavors to meld beautifully. Use a mandolin slicer for uniform cucumber slices.
