Method
 

Preparation
  1. Preheat your oven to 400°F (200°C). While it heats up, prepare your potatoes.
  2. Wash and dry the russet potatoes, then pierce them with a fork a few times. Bake directly on the oven rack for about 45 minutes or until they are tender.
  3. While the potatoes are baking, heat a skillet over medium heat. Add the ground beef or turkey, breaking it apart with a spatula as it cooks until browned. Drain excess fat if necessary.
  4. Stir in the taco seasoning and a splash of water, letting it simmer until combined and thickened.
  5. In a bowl, mix the black beans and corn together. Chop your green onions and cilantro; set everything aside.
Assembly
  1. Once the potatoes are cooked, remove them from the oven and cut each potato in half.
  2. Fluff the inside of each potato with a fork, then layer on the taco meat, followed by the black beans, corn, cheese, and any additional toppings you desire.
  3. Return the loaded potatoes to the oven for 5 more minutes, just until the cheese melts beautifully.
