  • 1/2 cup mayonnaise (or Greek yogurt) Greek yogurt can be used for a healthier option.
  • 1/2 cup crumbled cotija cheese Feta cheese works as an alternative.
  • 1 teaspoon chili powder Adjust to taste.
  • 1 unit lime (zested and juiced)

Method
 

Preparation
  1. Bring a large pot of water to a boil.
  2. Add the corn and cook for about 3-5 minutes until just tender.
  3. While the corn is cooking, combine the mayonnaise, lime juice, lime zest, chili powder, and salt in a small bowl.
  4. Once the corn is done, carefully remove it from the pot and allow it to cool slightly until it’s safe to handle.
  5. Generously slather the creamy mixture over the corn, ensuring every bite is rich and flavorful.
  6. Sprinkle crumbled cotija cheese across the top and finish with a dash of chili powder.
  7. Garnish with chopped cilantro for a touch of freshness.

Notes

Feel free to add avocado slices, diced jalapeños, or use a spicy sriracha mayo for extra flavor. If storing leftovers, keep in an airtight container in the refrigerator for up to 3 days.
