  • 8 small small flour tortillas Whole wheat is a healthier option.
  • 1 pound ground beef Or ground turkey for a lighter twist.
  • 1 cup shredded cheese Cheddar, mozzarella, or your favorite blend.
  • 1 cup diced vegetables Bell peppers, onions, or spinach work well.
  • 1 packet taco seasoning
For Serving
  • sour cream or Greek yogurt For serving.
  • olive oil For cooking.
  • optional toppings: salsa, guacamole, or hot sauce To enhance flavors.

Method
 

Preparation
  1. In a large skillet over medium heat, add a drizzle of olive oil. Once hot, add the ground beef and cook until browned. Drain any excess fat.
  2. Sprinkle the taco seasoning over the cooked meat, mixing well. Add a splash of water to help the spices adhere and cook for another 2-3 minutes.
  3. On a clean surface, lay out the tortillas. Spoon a portion of the seasoned meat into the center of each tortilla, followed by cheese and your choice of diced vegetables.
  4. Fold the sides of the tortilla inwards, then the top and bottom, to create a sealed pocket.
  5. In the same skillet, heat a little more olive oil over medium heat. Add the folded tortillas seam-side down and cook for about 3-4 minutes on each side, or until golden and crispy.
  6. Remove from the skillet and let cool slightly. Cut each slider in half and serve with your favorite dips like sour cream or salsa.

Notes

These sliders are perfect for make-ahead meals. Store any uneaten sliders in an airtight container in the refrigerator for up to three days. Reheat in a skillet over low heat or in the microwave.
