  • 1 cup Cooked Quinoa For a nutritious base (brown rice can also be used)
  • 1 can Chickpeas Drained and rinsed, offering a hearty protein
  • 1 cup Cherry Tomatoes Halved, for a splash of color and juiciness
  • 1 small Cucumbers Diced, for crunch and freshness
  • A handful Fresh Mint Leaves To infuse your dish with a fragrant kick (substitutable with basil)
  • Feta Cheese Crumbled, for a savory note (or skip for a vegan option)
Dressing Ingredients
  • 2 tablespoons Olive Oil
  • 1 tablespoon Lemon Juice
  • Salt To taste
  • Pepper To taste

Method
 

Preparation
  1. Wash all fresh ingredients under cold water and let them dry while preparing the base.
  2. In a large mixing bowl, combine cooked quinoa, drained chickpeas, and halved cherry tomatoes.
  3. Gently fold in diced cucumbers and crumbled feta cheese.
  4. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper for the dressing.
  5. Toss the dressing into the quinoa mixture and add in the fresh mint leaves, stirring gently to combine.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to three days. For freezing, omit the feta and mint beforehand.
