  • 1 teaspoon baking soda Helps the bread rise.
  • 1 pinch salt To balance the sweetness.
  • 3/4 cup sugar Feel free to experiment with brown sugar.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease or line a 4x8 inch loaf pan.
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth and stir in the melted butter.
  3. Mix in baking soda and salt, then add the sugar, beaten egg, and vanilla extract, mixing until just combined.
  4. Stir in the walnuts ensuring an even distribution.
Baking
  1. Pour the batter into the prepared loaf pan and smooth the top.
  2. Bake for 60 minutes, or until a toothpick inserted comes out clean. Cover with foil if browning too quickly.
  3. Allow to cool in the pan for 10-15 minutes before transferring to a wire rack.

Store in an airtight container for up to 4 days or freeze individual slices wrapped in plastic wrap.
