  • 1 teaspoon vanilla extract
Dry Ingredients
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg consider using freshly grated for a stronger flavor
  • 1/4 teaspoon ground ginger
Optional Ingredients
  • 1/2 cup chopped walnuts or pecans for added crunch

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper for easy removal.
  2. In a large mixing bowl, combine the pumpkin puree, vegetable oil, sugar, and eggs. Whisk until smooth, then stir in the vanilla extract.
  3. In another bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
  4. Gradually add the dry mixture to the wet ingredients, mixing just until combined. Be careful not to overmix, as this could affect the bread's texture.
  5. If using, fold in the nuts until evenly distributed throughout the batter.
  6. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
Baking
  1. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  2. Once done, remove from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Store wrapped tightly in plastic wrap or foil at room temperature for up to 3 days. Freeze for longer storage, ensuring it is fully wrapped. Thaw at room temperature or warm in the oven to enjoy fresh.
