Preparation
- Preheat the oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper for easy removal.
- In a large mixing bowl, combine the pumpkin puree, vegetable oil, sugar, and eggs. Whisk until smooth, then stir in the vanilla extract.
- In another bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
- Gradually add the dry mixture to the wet ingredients, mixing just until combined. Be careful not to overmix, as this could affect the bread's texture.
- If using, fold in the nuts until evenly distributed throughout the batter.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
Baking
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Once done, remove from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
