Preparation
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan and set aside.
- In a large mixing bowl, combine the grated zucchini, applesauce, vegetable oil, brown sugar, and granulated sugar. Mix well until fully combined.
- Beat in the eggs one at a time and stir in the vanilla extract.
- In another bowl, whisk together the flour, baking soda, cinnamon, salt, and nutmeg until evenly mixed.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not overmix.
- Fold in the chopped walnuts or pecans if desired.
- Pour the batter into the prepared loaf pan and spread it evenly.
Baking
- Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Notes
Don’t overmix to prevent dense bread. Fresh zucchini yields the best flavor. Always test for doneness.
