  • 1 cup grated zucchini Use fresh zucchini for best flavor
  • 1 cup applesauce (unsweetened) A healthier option
  • 1/2 cup vegetable oil
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour Can substitute with whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 teaspoon nutmeg (optional) Can be omitted
  • 1/2 cup chopped walnuts or pecans (optional) Can swap with chocolate chips

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan and set aside.
  2. In a large mixing bowl, combine the grated zucchini, applesauce, vegetable oil, brown sugar, and granulated sugar. Mix well until fully combined.
  3. Beat in the eggs one at a time and stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking soda, cinnamon, salt, and nutmeg until evenly mixed.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not overmix.
  6. Fold in the chopped walnuts or pecans if desired.
  7. Pour the batter into the prepared loaf pan and spread it evenly.
Baking
  1. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  2. Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

Don’t overmix to prevent dense bread. Fresh zucchini yields the best flavor. Always test for doneness.
