Main Ingredients
  • 1 pound breakfast sausage Feel free to substitute with turkey sausage for a leaner option
  • 6 large eggs
  • 3 cups diced potatoes Hash browns work well
  • 1 cup shredded cheese Cheddar is preferred, but feel free to mix different cheeses
  • 1/2 cup diced onions
  • 1/2 cup diced bell peppers Red and yellow add nice color
Seasoning
  • to taste salt
  • to taste pepper
Optional Garnish
  • Fresh herbs (like chives or parsley) For garnish

Method
 

Preparation
  1. Brown the sausage in a skillet over medium heat until browned. Break it up into small pieces as it cooks, then drain excess grease and set aside.
  2. Chop the onions and bell peppers into small dice.
Cooking
  1. Layer the diced potatoes in the slow cooker, followed by the cooked sausage, onions, and bell peppers.
  2. In a bowl, whisk together the eggs, salt, and pepper. Pour this mixture over the layered ingredients and top with shredded cheese.
  3. Cover the crock pot and cook on low for 6 to 8 hours.
Serving
  1. Once cooked, gently stir the dish and serve warm. Garnish with fresh herbs if desired.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to three days. Reheat in the microwave or on the stovetop until heated through, avoiding overcooking.
