Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, mash the ripe bananas until smooth, leaving a few chunks for added texture if desired.
- In another bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 3-4 minutes.
- Beat in the egg and vanilla extract until well combined.
- Gradually add the mashed bananas to the butter mixture, followed by the dry ingredients: flour, baking soda, and salt. Stir until just combined; do not overmix.
- Gently fold in the chocolate chips.
- Drop rounded tablespoons of dough onto a lined baking sheet, spacing them about 2 inches apart.
Baking
- Bake in the preheated oven for 12-15 minutes or until the edges are golden.
- Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.
Notes
For added crunch, you can mix in 1/2 cup of chopped walnuts or pecans. To enhance flavor, try adding a teaspoon of cinnamon or a pinch of nutmeg. For a gluten-free version, replace half the flour with almond flour.
