Preparation
  1. Start by washing the rice until the water runs clear to remove excess starch.
  2. In a large pan, heat the olive oil over medium-high heat. Season the chicken with salt and pepper, then add it to the pan, cooking for about 5 minutes on each side until golden brown.
  3. Pour the rinsed rice into the pan with the chicken. Add the honey and BBQ sauce, mixing well to coat everything evenly.
  4. Add 4 cups of water or chicken broth, mixing gently. Bring the mixture to a boil, then reduce to a simmer.
  5. Cover the pan and let it simmer for about 20 minutes, or until the rice has absorbed the liquid and the chicken is cooked through.
  6. Gently fluff the rice with a fork and serve warm, garnished with green onions or sesame seeds if desired.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat on the stove or microwave. Consider freezing individual portions for easy meals later.
