- Start by washing the rice until the water runs clear to remove excess starch.
- In a large pan, heat the olive oil over medium-high heat. Season the chicken with salt and pepper, then add it to the pan, cooking for about 5 minutes on each side until golden brown.
- Pour the rinsed rice into the pan with the chicken. Add the honey and BBQ sauce, mixing well to coat everything evenly.
- Add 4 cups of water or chicken broth, mixing gently. Bring the mixture to a boil, then reduce to a simmer.
- Cover the pan and let it simmer for about 20 minutes, or until the rice has absorbed the liquid and the chicken is cooked through.
- Gently fluff the rice with a fork and serve warm, garnished with green onions or sesame seeds if desired.
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat on the stove or microwave. Consider freezing individual portions for easy meals later.
